A fried ball of dough stuffed to the gills with corn, cheese, fresh green chiles and cilantro. Yes, it’s a mess to eat and involves my least favorite method of cooking, but I could think of no better way to celebrate the end of the summer months (and to welcome the rain we’ve been having).
I just recently discovered this South African snack and its subsequent holiday and if you’d like to give it a try, follow this youtube link: 2 ways with amagwinya. I’ve seen ones with a meat filling (and there are sweet versions as well) but there’s something about corn, cheese, and chiles that I find so comforting. And it’s colorful too!
