Countdown to T-Day. I don’t have to tell you how hectic life gets around this time of year, so what I’m sharing for the next few days are 3-ingredient recipes for a quick sit-down meal. These are pantry staples that I always have on hand, so no special trip to the supermarket required. Love brussel sprouts? We do, especially when combined with smoked bacon and sweet onion jam.
Clean and trim the brussel sprouts of any blemished leaves and cut in half.
Blanch them for 3 minutes in boiling water that has been lightly salted; drain.
Cut 2 strips of bacon into pieces and saute over medium heat until fat is released.
Add sprouts, raise heat to medium-high, and cook until lightly caramelized; 5 minutes.
Remove from heat and stir in 2 tablespoons onion jam (more if you like).
Top with freshly ground black pepper. Serves 2.
NOTE: if the bacon is not fatty enough, add a splash of olive oil to the pan.
