When the fish head comes for free


Whoever said that you can’t get anything for free these days? If anybody can guess what fish this is, oblige me an answer in a comment.

Last week we were at our favorite fishmonger when my eyes fell upon thick-cut steaks of the specimen above. I already knew that the fish in question was the basis for a classic regional french dish, but asked the saleswoman anyway if it was also good in a soup. She assured us that it was, and when I requested the tail-end (which was about 1½ lbs), she added, ‘Do you want the head too? I’ll throw it in for free.’
